Sheila's Brown Sugar Delights

  • 4 medium eggs
  • 1 Lb brown sugar
  • 1 1/2 Cup pecans , chopped
  • 1 1/2 Cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract , or almond extract
  • 4 Tbsp powdered sugar (optional)
Combine eggs and brown sugar in the top of a double boiler. Cook over boiling water for 10 minutes. stirring occasionally. Add pecans and remove from heat. Sift together the flour, salt, and baking powder, then stir into the first mixture. Stir in the vanilla extract. Spread mixture into a well-greased 8x12 inch pan. Bake at 375 ℉ for 30 to 35 minutes. Cool on rack before cutting and serving. If desired, sprinkle with powdered sugar.
