Tuna Melt Sandwiches

  • 2 large eggs
  • 1 1/4 Cup mayonnaise
  • 1/2 tsp dry mustard
  • 2 Lb canned tuna , drained
  • 1 1/2 Cup celery , chopped
  • 1 1/2 tsp onion flakes
  • 25 English muffins , sliced in half
  • 3/4 Lb cheddar cheese , grated
Place eggs in saucepan and cover with water. Bring water to a boil, reduce heat, and simmer for 10 minutes. Drain, rinse in cold water, and chill in the refrigerator. When chilled, peel and finely chop.

Preheat oven to 350 ℉. In a large bowl, combine the mayonnaise and mustard. Add the egg, tuna, celery, and onion flakes. Place halved English muffins on a baking pan. Top with mixture, dividing equally, then top with cheese and other muffin halves. Bake for 5 minutes, or until cheese melts.
