Vegetarian Pizza Muffins

  • 1 Cup ricotta cheese
  • 1 Cup mozzarella cheese, shredded
  • 1/4 Cup grated Parmesan cheese
  • 4 Tbsp bottled roasted red bell peppers , chopped
  • 1/2 tsp dried oregano
  • 1 clove garlics , crushed
  • 4 whole wheat English muffins , split and toasted
  • 3/4 Lb broccoli florets , thawed if frozen
Preheat oven to 375 ℉. Combine first 6 ingredients in a bowl. Spread about 2 normal Tbsp on each muffin half and place on cookie sheet. Top with broccoli and remaining cheese mixture. Bake 10 minutes or until cheese melts.
