KK's Lemon Yogurt Pound Cake

  • 2 Cup sugar
  • 1 Cup shortening
  • 3 eggs
  • 2 1/4 Cup flour
  • 1 Cup lowfat lemon yogurt
  • 4 Tbsp water
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
Preheat oven to 350 ℉. In a bowl, combine the sugar and shortening. Beat in eggs, then mix in remaining ingredients. Pour into greased and floured tube pans or 8x4 inch loaf pans. Bake for 45-55 minutes, or until a wooden toothpick inserted comes out clean. Cool before serving.
