Shrimp and Fruit Salad

  • 4 Fl Oz white wine
  • 3 peppercorns
  • 1 Cup water
  • 1 Lb shrimp , shelled and cleaned
  • 2 3/4 Fl Oz cottage cheese, uncreamed
  • 2 tsp dill , or more to taste
  • 2 1/2 Fl Oz buttermilk
  • 2 tsp lime juice , to taste
  • 1 mangoes , peeled, pitted and cubed
  • 1 papayas , peeled, seeded and cubed
  • 4 Cup mixed salad greens
  • 1 ripe tomatoes , cut into quarters
  • 1 limes , sliced
Bring first 3 ingredients to a boil in a skillet or saucepan. Add shrimp and cook 3-5 minutes. Rinse with cold water, then chill. Mix next 4 ingredients in a food processor or blender. Combine shrimp, dressing, and fruit in a bowl, then chill at least 30 minutes. Wash greens and arrange on individual plates. Serve chilled salad on bed of greens. Garnish each plate with tomato and lime.
