Black-Eyed Pea Salad

  • 1 Lb black-eyed peas , soaked and drained
  • 2 cloves garlic , crushed
  • 4 Tbsp minced onion
  • 3 vegetable bouillon cubes
  • 1/2 Cup onions , minced
  • 1/2 Cup carrots, grated
  • 1 Cup celery , thinly sliced
  • 1/2 Cup green bell pepper , chopped
  • 4 Fl Oz bottled salad dressing
  • 4 Cup lettuce , chopped
Cover soaked and drained peas with 3 normal quart water. Add garlic, minced onion, and bouillon cubes. Bring to a boil, lower heat, and simmer until tender, about 30 minutes. Drain and discard cooking broth. Chill beans, in refrigerator, uncovered. Mix in remaining ingredients and chill once again to blend flavors. Spoon onto chopped lettuce.
