Spanish Hot Chocolate

  • 3/4 Lb semisweet chocolate , grated
  • 1 Pint water
  • 1 tsp cornstarch , dissolved in a little water
Heat the grated chocolate and the water in a saucepan. Mix thoroughly. When it comes to a boil, add the dissolved cornstarch. Bring to a boil three times, whisking vigorously and removing from the heat each time it starts to bubble. (Do not let mixture boil over.) Ladle into cups from a suitable height to make frothy.
