New York Style Cheesecake

  • 1 1/2 Cup flour
  • 1/2 Cup sugar
  • 1 egg yolks
  • 4 Tbsp butter
  • 1/2 tsp lemon zest
  • 2 Lb cream cheese
  • 3/4 Cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 Tbsp cornstarch , or arrowroot powder
  • 2 Cup sour cream
Preheat oven to 375 ℉. In a bowl, blend first 5 ingredients until it resembles cornmeal. Transfer to a 9 inch springform pan. Spread evenly over bottom and about 2 inch up the sides.

Cream the sugar and cream cheese using a mixer or food processor. Add vanilla and cornstarch and blend well. Fold in the sour cream. Pour into the springform pan. Bake for about 1 hour, or until tester comes out clean when inserted in center. Allow to cool before unmolding. Serve at room temperature.
