Pear and Pine Nut Salad

  • 3/4 Lb red leaf lettuce , or romaine lettuce, washed and chopped
  • 1 Anjou or Bosc pears , cut into pieces
  • 1/4 Lb pine nuts , toasted
  • 1/4 Lb Gorgonzola cheese , or blue cheese, crumbled
  • 4 Fl Oz vegetable oil
  • 2 3/4 Tbsp white wine vinegar
  • 3 tsp sugar
  • 1 tsp poppy seeds
  • 1 tsp fresh shallots or scallions , chopped
Portion first 4 ingredients onto serving dishes. Add remaining ingredients to a blender and mix until just blended. Pour over salad and serve.
