American Crab Cakes

  • 1 Lb crab meat , or imitation crabmeat, chopped
  • 1 1/2 Cup fresh soft breadcrumbs
  • 4 Tbsp mayonnaise
  • 2 Tbsp parsley
  • 3 tsp onion powder
  • 3 tsp fresh thyme
  • 1 tsp dry mustard
  • 1/2 tsp ground ginger
  • 4 Tbsp olive oil
Combine all ingredients except the olive oil. Form into cakes about .5 inch thick. Add olive oil to heavy skillet. Add cakes and fry in batches over medium heat for about 3-5 minutes per side, or until golden brown.
