Apricot Pork Salad

  • 3/4 Lb boneless pork chops
  • 2 Cup mixed salad greens
  • 6 fresh ripe apricots , cut into wedges
  • 3/4 Cup walnut halves , toasted
  • 2 3/4 Fl Oz red wine vinegar
  • 2 Tbsp sugar
  • 3/4 tsp tarragon , crumbled
  • 1/4 tsp marjoram , crumbled
  • 1/4 tsp fresh thyme , crumbled
  • 4 Fl Oz olive oil or vegetable oil
Broil pork chops 5-7 minutes per side, or until done. Cool, then cut into strips. Place greens in salad bowl. Top with pork, apricots, and walnuts.To make dressing, combine remaining ingredients in a jar and shake thoroughly. Top salad with dressing.
