Peach Preserves

  • 3 Lb peaches , sliced, pitted, peeled
  • 1 package powdered pectins
  • 2 Tbsp lemon juice
  • 6 Cup sugar
Combine peaches, powdered pectin, and lemon juice in a large saucepan. Bring to a boil, stirring gently. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute stirring constantly. Remove from heat. Skim foam if necessary. Ladle hot preserves into hot jars, leaving .25 inch headspace. Adjust two-piece caps. Process 10 minutes in a boiling-water canner. Yield: About 9 half-pints.
