Waldorf Chicken Salad

  • 4 Tbsp honey
  • 2 Tbsp Dijon mustard
  • 3 tsp poppy seeds
  • 2 3/4 Fl Oz lemon juice
  • 1/2 tsp lemon peel , grated
  • 4 Tbsp vegetable oil
  • 12 dried apricots , sliced
  • 2 Cup roasted chicken meat , cubed
  • 2 apples , cored and diced
  • 1 Cup celery , diced
  • 1/4 Cup sliced almonds , toasted
  • 4 Tbsp chopped green onions , minced
Place first 6 ingredients in a bowl and mix well. Stir in apricots and let stand 30 minutes. Add chicken and toss lightly. Chill until ready to serve. To serve, add remaining ingredients to chicken mixture and toss well.
