Oatmeal Raisin Cookies

  • 1 Cup butter
  • 1 Cup brown sugar, packed firmly
  • 1/2 Cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 Cup all purpose flour
  • 1 1/2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 Cup old fashioned oats
  • 1 1/4 Cup raisins
Preheat oven to 350 ℉. In a large bowl, beat the butter and sugars together until creamy. Add eggs and vanilla extract and beat. Mix in remaining ingredients, stirring well.

Drop dough by heaping tablespoons onto cookie sheet, spacing them at least 1 inch apart. Bake 10-12 minutes, or until golden brown. Cool 5 minutes before transferring cookies to racks to cool completely.

Variation: Use dried cranberries instead of raisins.
