Old-Fashioned Tapioca Pudding

  • 1 Cup pearl tapioca , soaked overnight
  • 1 Cup brown sugar
  • 1 Cup dates , chopped
  • 1/2 tsp salt
  • 1 Quart milk
Place pearl tapioca (not instant) in a bowl and soak overnight in water. Drain and return to the bowl. Stir in brown sugar, chopped dates, and salt. Slowly add milk, stirring. Transfer to casserole dish or baking pan. Place in preheated 350 ℉ oven. Bake for about 1 hour. Let cool before serving.
