Raspberry Lemon Mousse

  • 4 Fl Oz heavy cream
  • 1 Cup lemon curd
  • 1 Cup fresh raspberries
Whip cream to soft peaks in a chilled bowl using an electric mixer. Whisk 1/3 cream into lemon curd in another bowl. Fold in remaining cream. Spoon into dessert dishes and refrigerate for at least 15 minutes, or up to 4 hours. Sprinkle berries over mousse just before serving.
