Melba Nectarines with Ice Cream

  • 3/4 Lb fresh raspberries
  • 1/2 Cup sugar
  • 3 tsp lemon juice
  • 5 1/4 Fl Oz heavy cream
  • 3 tsp powdered sugar
  • 1/2 tsp Grand Marnier or orange juice
  • 1 Quart vanilla ice cream
  • 3 ripe nectarines , sliced
Press berries through a sieve to remove seeds. Combine raspberry pur'ee and sugar in a saucepan over medium heat. Cook 3-5 minutes, stirring constantly, until sauce begins to thicken. Stir in lemon juice and mix well. Beat cream and next 2 ingredients to soft peaks in a chilled bowl using an electric mixer. Divide ice cream among individual dessert dishes and top with nectarine slices. Drizzle with raspberry sauce and top with a dollop of whipped cream.
