Cranberry Raisin Nut Bread

  • 1 1/2 Cup all purpose flour
  • 3/4 Cup brown sugar, packed
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 Cup fresh or frozen cranberries , coarsely chopped
  • 1/2 Cup golden raisins
  • 1/2 Cup chopped pecans
  • 3 tsp orange peel , grated
  • 2 eggs
  • 6 Fl Oz milk
  • 3 Tbsp unsalted butter , melted
  • 1 tsp vanilla extract
Preheat oven to 350 ℉. Sift together first 6 ingredients in a large bowl. Stir in next 4 ingredients. Mix remaining ingredients in another bowl until combined. Add to flour mixture and stir until just moistened. Spoon into a buttered 9 inch loaf pan. Bake 55-60 minutes or until a tester comes out clean when inserted in center. Cool in pan 15 minutes. Remove from pan and cool completely on a wire rack.
