Ham Salad Sandwiches

  • 1/2 Lb cooked ham , chopped
  • 1/2 Cup cheddar cheese , shredded
  • 1/2 Cup celery , finely chopped
  • 1/2 Cup scallions , finely chopped
  • 4 Tbsp carrots, grated
  • 4 Tbsp fat-free mayonnaise , or salad dressing
  • 2 eggs , hard cooked, chopped
  • 2 Tbsp green olives , chopped
  • 1/2 tsp garlic powder
  • 16 slice rye bread
  • 8 lettuce leaves
Combine all ingredients, except bread and lettuce, in a food processor or bowl. Season with pepper to taste and mix well. Chill thoroughly. Spread ham salad over half the bread slices. Top with lettuce and other bread slices.
