Crab Sandwiches with Herbs

  • 1 1/2 Lb lump crab meat
  • 4 Tbsp mayonnaise
  • 3 tsp parsley , minced
  • 3 tsp fresh tarragon , minced
  • 2 Tbsp scallions , minced
  • 1/2 Lb cream cheese
  • 2 eggs , beaten
  • 1 tsp Dijon mustard
  • 6 English muffins , split and toasted
  • 6 tomato slice
Combine first 5 ingredients in a bowl. Combine cream cheese, eggs, and mustard in another bowl and beat until thoroughly mixed. Spread crab mixture over English muffins. Spread cream cheese mixture on top, and broil muffins 3 minutes 6 inch from heat source. Add tomato slices and broil another 2 minutes.
