Bacon, Onion and Mushroom Focaccia

  • 1 loaf wheat breads , thawed until warm and bubbly
  • 2 Tbsp olive oil
  • 7/8 pinch Italian seasoning
  • 6 slice bacon , cut into 1 in. pieces
  • 1 medium onions , thinly sliced
  • 1/2 Lb mushrooms , sliced
Roll dough into a 10x15 inch rectangle. Place on a greased cookie sheet. Let rise 30 minutes. Brush with half the oil. Lightly sprinkle with herbs. Press dough down with fingers to form a dimpled surface. Preheat oven to 400 ℉. Saut'e bacon 3-4 minutes in a heavy nonstick skillet over medium high heat, or until browned. Add onions and mushrooms and cook another 4-5 minutes, or until very tender. Discard drippings. Spread bacon, onion and mushroom mixture over dough. Bake 15-20 minutes.
