Banana, Apricot & Pineapple Compote in Pastry Shells

  • 4 frozen puff pastry shells
  • 2 bananas , peeled and cut into .5 in. rounds
  • 8 apricots , pitted and cut into quarters
  • 1/4 Lb pineapple chunks , coarsely chopped
  • 1 tsp lemon juice
  • 2 Tbsp sugar
Bake puff pastry shells according to package directions. Combine remaining ingredients in a mixing bowl. Toss well. Refrigerate at least 15-20 minutes before serving in baked puff pastry shells.
