Lower Fat Oatmeal Spice Cookies

  • 3/4 Cup brown sugar, packed firmly
  • 1/2 Cup granulated sugar
  • 4 Tbsp unsalted butter , softened
  • 6 Fl Oz applesauce , or apple butter
  • 2 egg whites , or 1 whole egg
  • 2 Tbsp skim milk
  • 2 tsp vanilla extract
  • 1 1/2 Cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt (necessary)
  • 1/4 tsp nutmeg
  • 3 Cup quick cooking oats , or old fashioned oats, uncooked
  • 1 Cup raisins , or dried mixed fruit, diced if mixed fruit
Preheat oven to 350 ℉. Lightly spray a cookie sheet with nonstick cooking spray. Beat together sugars and butter until well blended. Add next 4 ingredients and beat well. Combine flour and next 4 ingredients in another bowl. Stir into sugar mixture. Stir in oatmeal and raisins and mix well. (Dough will be moist.) Drop by rounded tablespoonfuls onto prepared cookie sheet. Bake 10-12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheet and remove to wire rack. Cool completely. Store in tightly covered container.

Easy Bar Cookies: Spread dough evenly onto bottom of an ungreased 13x9 inch baking pan. Bake 25-30 minutes or until edges are light golden brown. Cool completely and cut into bars. Store tightly covered.
