Fruitful Morning Muesli

  • 2 Cup quick cooking oats , or old fashioned oats, uncooked
  • 2 Cup apple juice , or apricot nectar
  • 1 1/2 Cup fresh berries - strawberries, blueberries, raspberries or blackberries; also consider adding bananas, peaches, or nectrines
  • 1 Cup lowfat vanilla yogurt
  • 2 Tbsp nuts , chopped
Combine all ingredients, except nuts, in a bowl and mix well. Cover and refrigerate 8 hours or overnight. Preheat oven to 350 ℉. Spread nuts evenly in a shallow baking pan. Bake 5-8 minutes or until golden, stirring occasionally. Serve cold, topped with nuts. Can be refrigerated, covered, up to 4 days.
