Turkey Breast Sandwich

  • 4 turkey breast fillets , about 4 oz each
  • 1/2 tsp pepper
  • nonstick cooking spray
  • 8 slice whole wheat bread
  • 4 Fl Oz barbecue sauce
  • 4 Fl Oz sweet pickles , sliced
  • 4 Romaine lettuce leaves
  • 1 tomatoes , sliced
Season turkey with pepper. Place turkey fillets between two sheets of wax paper and pound lightly with a mallet or other heavy flat object until very thin. Coat a heavy nonstick skillet with cooking spray and place over medium high heat. Saut'e turkey 2-3 minutes per side, until lightly browned and cooked throughout. Serve fillets on bread with barbecue sauce, pickles, lettuce and tomato.
