Two-Potato Salad

  • 1/2 Lb new potatoes , cut into .75 in. pieces
  • 1/2 Lb sweet potatoes , peeled and cut into .75 in. pieces
  • 1 1/2 tsp white wine vinegar
  • 1 1/2 Tbsp Dijon mustard
  • 1 1/4 Tbsp olive oil
  • 2 Tbsp onions , minced
  • 2 Tbsp red bell pepper , minced
  • 3 tsp sweet gherkins , minced
Place new potatoes in a steamer basket over boiling water. Arrange sweet potatoes over new potatoes. Cover saucepan and steam 10-12 minutes or until potatoes are tender. Remove potatoes from steamer basket. Rinse under cold water to stop cooking process. Drain and set aside. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over potatoes. Toss and serve.
