Chili Lime Crab Cakes with Chipotle Avocado Mayonnaise

  • 1 Lb crab meat
  • 10 saltine crackers
  • 1 large eggs
  • 2 Tbsp Ranch dressing
  • 2 tsp Vietnamese garlic-chili paste
  • 2 tsp lime juice
  • 3 tsp cilantro
  • 3 tsp extra virgin olive oil
  • 1 medium avocadoes , peeled, seeded, and mashed
  • 1/2 tsp chili powder
  • 1/2 tsp lemon juice
  • 4 Tbsp mayonnaise
  • 1/4 pinch salt and pepper (or to taste)

Avocado Mayonnaise: Combine regular mayonnaise, chili powder, avocado, lemon juice, and salt and pepper in a small mixing bowl and blend well.  Chill.

Crab Cakes: In a large bowl, combine crackers, egg, ranch dressing, garlic paste, lime juice and cilantro. Gently fold in crab meat.  Form into 6 cakes.  Sauté in olive oil until golden brown on both sides.  Serve with dollops of avocado mayonnaise.

Serving suggestion:  Serve with black bean and corn salsa.

Additional Instructions:

A substitution for oriental chili garlic paste can be made by mixing the following: 2 tsp Heinz chili sauce, 1/4 tsp garlic powder and Tabasco sauce, to taste.

A substitution for chipotle chili can be made by mixing the following: 1/4 tsp chili powder, 4 drops liquid smoke and 4 drops Tabasco sauce.
