Sweet Potato Hummus

  • 1 large sweet potatoes , orange-fleshed
  • 1 (15 oz) can Progresso┬« chick peas , drained, rinsed
  • 4 Tbsp almond butter or tahini
  • 4 Tbsp fresh lemon juice
  • 3 Tbsp extra virgin olive oil
  • 1 garlic cloves , halved
  • 1 1/2 tsp fine sea salt
  • 2 tsp smoked paprika
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 4 Tbsp toasted blanched almonds or marcona almonds
  • 2 Tbsp flat leaf parsley , coarsely chopped
  • 3 tsp extra virgin olive oil
Prick skin of sweet potato(s) with fork. Microwave on High 6 to 8 minutes or until tender. Let cool 15 minutes or until cool enough to handle. Peel and cut up cooked sweet potato.

To make hummus, place cooked sweet potato and remaining hummus ingredients (first ten in list) in large food processor. Cover; process until smooth. If needed, add water 1 tbsp at a time to desired consistency. Cover and chill at least 2 hours to allow flavors to blend.

To serve, spoon hummus onto serving platter. Top with almonds, parsley and drizzle with olive oil. Serve with flat bread crackers and/or fresh veggies.
