Sopapillas - Cinnamon Puffs

  • 1 1/4 Pint very hot water

  • 4 Tbsp clear honey

Blend the flour, hot water, and optional salt in a bowl until smooth – this dough should still be slightly sticky when you are mixing it. Allow the dough to rest for at least 10 minutes. Flour a rolling surface, and knead enough extra flour into the dough to make it smooth and non-sticky. Roll out to a thickness of 1/8 inch and cut into desired shapes and sizes.

Mix the cinnamon and sugar together and set aside. Heat about 1/4 inch of oil to 375 ℉. Cut the dough to desired size (the smaller they are, the better they will puff). Fry in oil until puffed and golden brown.
