Turkey Croque Monsieur Sandwich

  • 2 Tbsp unsalted butter
  • 3 Tbsp all purpose flour
  • 2 Cup hot milk
  • 1 tsp salt
  • pinch ground black pepper
  • 3/4 Lb cheddar cheese or other yellow cheese, grated
  • 16 slice white bread , crusts removed
  • Dijon mustard
  • 1/2 Lb cooked turkey , light or dark meat, sliced thin
  • 1 Cup prepared seasoned stuffing
  • 4 Fl Oz cranberry sauce
Preheat the oven to 400 ℉. Melt the butter over low heat in a small sauce pan and add the flour all at once, stirring with a wooden spoon for 2 minutes. Slowly pour the hot milk into the butter–flour mixture and cook, whisking constantly, until the sauce is thickened. Turn off the heat and add the salt, pepper, and 1/2 normal cup grated cheese.

Toast the bread.

Lightly brush half the toasted breads with mustard; add a slice of turkey to each and sprinkle with some of the remaining cheese.

Add a spoonful of stuffing & cranberry sauce to top and spread in layers, keeping the top flat. Top with another piece of toasted bread. Slather the tops with the cheese sauce, sprinkle with the remaining cheese, and bake the sandwiches until lightly browned. Serve hot.
