Roast Shrimp with Prosciutto

  • 24 medium shrimp , cleaned and pealed
  • 24 slice prosciutto
  • 24 small, fresh bay leaves
  • 2 tsp cognac
  • 2 Tbsp olive oil
  • salt and pepper , to taste
Salt and pepper the back of each shrimp; place a bay leaf on top and wrap with a slice of prosciutto. Place the shrimp in a roasting pan and brush with a little olive oil.

Cook for about 10 minutes, making sure that the ham does not burn. Add the Cognac and allow to evaporate.
