Apricot-Sauced Ribs

  • 2-1/4 lbs pork spareribs, cut into serving size pieces
  • 1/2 lb canned apricots, undrained
  • 3 Tbsp ketchup
  • 3 Tbsp brown sugar
  • 2 Tbsp lemon juice
  • 1 Tbsp Dijon mustard
  • 1 tsp ginger

Prepare grill by banking medium hot coals in covered grill. Place ribs on grill over a drip pan, cover grill and cook ribs over indirect heat 1-1/2 hours, turning occasionally. While ribs are cooking, mix remaining ingredients and salt to taste together in a blender. Brush ribs generously with sauce and continue to cook about 30 minutes, basting and turning often.
