Fruit Cobbler (Dairy Free and Egg Free)

- 4 Tbsp vegan margarine
- 3/4 Cup Better BatterÂ® gluten-free flour
- 3/4 Cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 6 Fl Oz soy milk or almond milk
- 2 Cup fresh strawberries , sliced fresh peaches, nectarines, whole blueberries, raspberries, blackberries or other combination of fruit.
- 3 tsp sugar
Preheat oven to 350 ℉.
Put vegan margarine in 8 in square pan. Whisk flour, sugar, baking powder and salt in small bowl. Add milk, whisk to form a smooth batter. Pour batter over melted margarine in pan.
Scatter fruit over batter. Sprinkle with remaining sugar. Note: when using peaches, I like to sprinkle on some cinnamon and a bit of nutmeg with blueberries.
Bake at 350 ℉ until batter browns and fruit bubbles, about 50-60 minutes.
For a non-vegan version, this recipe will also work with butter or margarine in place of the vegan margarine, and milk in place of soy/almond milk. You can also double it and put it in a 9x13 inch pan.
