Hot Turkey Sandwiches

  • 4 Tbsp chicken stock
  • 1 Cup mushrooms , thinly sliced
  • 2 Cup prepared turkey gravy
  • 1/4 tsp tarragon
  • 1 tsp Dijon mustard
  • 1/2 Lb cooked turkey breast , sliced
  • 4 slice whole wheat bread , toasted
Combine stock and mushrooms in a heavy nonstick skillet over medium high heat. Saut'e 3 minutes, or until tender and liquid is almost evaporated. Stir in gravy, tarragon and mustard. Mix well. Add turkey slices and simmer until hot. Place turkey on toast and serve with gravy.
