The Fishguy's Native Shrimp Cakes

  • 1 Lb raw shrimp , cleaned and deveined
  • 1 tsp dry mustard
  • 1 tsp baking powder
  • 1 tsp lemon peel , finely grated
  • 1 tsp fresh lemon juice
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp white pepper
  • 1 large eggs
  • 4 Tbsp shallots, minced
  • 4 Tbsp parsley , finely minced
  • 3 tsp heaping mayonnaise
  • 12 Ritz crackers
In a food processor, add all of the ingredients. Pulse in food processor until a paste that you can form into patties is achieved. Fry until crisp on each side in hot pan. (3 to 4 minutes per side). Serve with lemon wedges and a nice fruit salsa or scented aoli.
