Green Beans with Sun-dried Tomatoes, & fresh Mozzarella

- 1 Lb fresh green beans
- 3 Oz oil-packed sun-dried tomatoes , drained and finely diced
- 1/2 Cup chopped walnuts
- 2 1/2 Fl Oz extra virgin olive oil
- 2 Tbsp freshly squeezed lemon juice
- salt and pepper
- 3/4 Lb fresh mozzarella , balls, drained and cut into chunks
Trim 1/4 inch from both ends of the beans, then cook in a large saucepan of boiling salted water for about 5 minutes or until tender-crisp. Drain well and place in a large bowl.
Lightly toss the hot beans with the sun-dried tomatoes, walnuts, olive oil and lemon juice. Season with salt and pepper and allow to cool.
Once the beans have cooled, gently mix in the mozzarella. Season again with salt and black pepper to taste. Serve immediately.
