Fancy Chicken Pasta Salad

  • 3 boneless, skinless chicken breast half , about 4 oz each
  • 2 Cup small shell pasta
  • 3 Cup broccoli florets
  • 1 Cup red bell pepper , seeded and cut in strips
  • 1/2 Lb snow peas , trimmed
  • 4 Tbsp scallions , sliced
  • 4 Tbsp vegetable oil
  • 2 1/2 Fl Oz red wine vinegar
  • 2 Tbsp honey
  • 2 tsp sesame seeds , toasted
  • 2 cloves garlic , crushed
  • 1 tsp hot pepper sauce
  • 1/2 tsp ground ginger
Combine chicken and enough water to cover in a saucepan over medium heat. Cook 15 minutes, or until cooked throughout. Drain and cut into bite-size pieces. Cook macaroni in a large pan of boiling water 8-10 minutes, or until al dente. Drain. Combine macaroni and chicken in a bowl. Add broccoli, pepper, snow peas and scallions. Toss gently. Combine oil, next 6 ingredients and salt to taste in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over salad and toss gently. Cover and chill until ready to serve.
