Rainbow Salad

  • 1 Cup flour
  • 1 Cup non-dairy milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp sea salt
  • 1 head cauliflowers
  • 2 Tbsp grapeseed oil
  • 2 Cup hot pepper sauce
  • 1 Cup cashews
  • 2 Tbsp lemon juice
  • 2 Tbsp cider vinegar
  • 3 tsp fresh chives
  • 3 tsp parsley
  • 1 garlic cloves
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 2 carrots
  • 1 yellow bell peppers
  • 1 Cup cherry tomatoes
  • 2 Cup pea shoots
  • 1/2 cucumbers
Top, tail and peel the carrot, then using a vegetable peeler, make long ribbons. Slice the yellow pepper and cucumber into long thin strips. Cut the cherry tomatoes in half. Thinly slice the radishes. Slice the onions into small rings. Place all of these ingredients into a salad bowl with the pea shoots. Drizzle on the olive oil and the juice of the lemon; then season.

Ideal served with grilled chicken, steamed fish or slices of Serrano ham. This Rainbow Salad will make a colorful, nutritious addition to summer living.
