Asian Lettuce Wraps

  • 2 tsp soy sauce (for sauce).
  • 2 tsp hoisin sauce (for sauce).
  • 2 tsp lime juice (for sauce).
  • 3 tsp peanut butter (for sauce).
  • 1/4 tsp ground ginger (for sauce).
  • 1 1/2 tsp chili sauce , preferably sriracha. (for sauce).
  • 1 tsp sesame oil
  • 1/2 medium yellow onions , diced.
  • 1 Lb boneless chicken breasts , cubed.
  • 1/2 Cup shredded carrots
  • 2 garlic cloves , minced.
  • 1 head green leaf lettuce , butter or romaine.
  • 4 Tbsp chopped peanuts
  • 3 green onions , thinly sliced.
  • 2 cilantro sprigs , chopped.
  • 1 1/2 Cup couscous or rice.
Whisk together the sauce ingredients and set aside. In a large skillet, heat sesame oil over medium heat. Once hot, add in onion. Cook for 5 minutes, or until the onion is tender. Add in chicken, carrots, and garlic. Cook until chicken is no longer pink. Once cooked, stir in the sauce and serve in a lettuce wrap with couscous or rice, peanuts, green onions, and cilantro.
