Portuguese Sweet Bread

  • 1 package active dry yeasts
  • 4 Fl Oz warm water , about 115 degrees
  • 2 1/2 Cup all purpose flour
  • 4 Tbsp dry milk powder
  • 1/2 tsp salt
  • 7/8 pinch nutmeg
  • 4 eggs
  • 4 Tbsp sugar
  • 1/2 tsp lemon extract
  • 2 Tbsp unsalted butter , melted
  • 4 Tbsp water
  • 1 1/2 Pint oil , for frying
  • 2 3/4 Fl Oz water
  • 4 Tbsp powdered sugar
Stir yeast into warm water in a bowl. Set aside. Sift next 4 ingredients together in a large bowl. Set aside. Using an electric mixer, beat eggs in another bowl, adding sugar a small amount at a time, until thickened. Add next 3 ingredients. Add yeast mixture and mix thoroughly. Stir egg mixture into dry ingredients until mixed thoroughly. Cover lightly and set aside in a warm draft-free area to let rise 2 hours.

Heat oil in a deep fryer or skillet to 375 ℉. Working in batches, drop dough by teaspoonfuls into hot oil and fry 2-3 minutes or until golden brown. Do not overcrowd. Using a slotted spoon, transfer cooked bread to paper towels to drain 5 minutes. Place powdered sugar in a clean paper bag. Transfer sweet breads to bag and shake lightly to coat.
