Sour Cream Waffles

  • 4 Tbsp unsalted butter , melted
  • 1 Cup milk
  • 1 1/2 tsp vanilla extract
  • 1 Cup sour cream
  • 2 large eggs , separated, whites beaten to stiff peaks
  • 1 1/2 Cup all purpose flour
  • 3 tsp baking powder
  • 2 Tbsp sugar
Preheat waffle iron. Combine first 4 ingredients and egg yolks in a bowl. Mix thoroughly. Sift dry ingredients together in a bowl. Stir into milk mixture until mixed thoroughly. Fold in beaten egg whites. When hot, lightly brush waffle iron surface with oil. Ladle about 3/4 whole cup batter per waffle onto waffle iron. Close cover and bake 4-5 minutes or until iron stops steaming. Open cover and use fork to remove waffle. Continue with remaining batter. Serve immediately with desired toppings or keep warm in 200 ℉ oven.
