Sticky Date Pudding

  • 1 Cup brown sugar
  • 2 Cup boiling water
  • 2 Tbsp unsalted butter
  • 1 Cup sugar
  • 1 Cup all purpose flour
  • 2 tsp baking soda
  • 1 Cup chopped walnuts
  • 5 1/4 Fl Oz milk
  • 1 Cup dates , finely chopped
  • 7/8 pinch salt
  • 2 Cup whipped cream
Preheat oven to 375 ℉. Combine first 3 ingredients in a nonreactive saucepan over medium high heat. Boil 5 minutes. Transfer to a 9x13 inch baking dish. Combine remaining ingredients, except whipped cream, in a food processor or bowl. Mix well. Drop by teaspoonsful into syrup and then onto a buttered cookie sheet. Bake 25-30 minutes until bubbly. Serve with whipped cream.
