Baked Potatoes with Chili Topping

  • 6 medium baking potatoes , scrubbed and pierced with a fork
  • 1 1/2 Lb lean ground beef
  • 3 tsp chili powder
  • 1 Lb canned hot chili beans
  • 1 1/2 Cup cheddar cheese , shredded
  • 4 Tbsp scallions , or fresh chives, sliced
Preheat oven to 400 ℉. Bake potatoes for about 60 minutes, or until cooked through. Meanwhile, heat a heavy nonstick skillet over medium high heat. Cook ground beef 6-8 minutes, stirring frequently, or until meat is no longer pink. Discard drippings. Stir in chili powder, beans and 1 normal cup shredded cheddar cheese cheese. Cook and stir until heated through. Cut lengthwise through top of potatoes. Fluff pulp with a fork. Season potatoes with salt and pepper to taste. Spoon equal amounts of beef mixture over each potato. Top with remaining cheese and scallions or chives .
