Three Spice Chicken Salad

  • 4 Tbsp oil
  • 1 lemons , juiced, peel grated from 1/2 lemon
  • 3 tsp honey
  • 1/4 tsp ginger
  • 1/4 tsp curry powder
  • 7/8 pinch garlic powder
  • 1 1/2 Cup cooked chicken , cubed
  • 1 1/2 Cup grapes , halved
  • 1/2 Cup celery , sliced
  • 3 Cup lettuce , torn
  • 1/2 lemons , cut in wedges
Combine oil, grated peel, lemon juice, honey, ginger, curry powder and garlic powder in a bowl. Stir in chicken, grapes, and celery. Toss lightly. Serve on lettuce with lemon wedges.
