Warm Pork and Spinach Salad

  • 1 Lb boneless lean pork loin , cut into thin strips
  • 1 Lb fresh spinach leaves , coarsely shredded
  • 3 Cup watercress sprigs
  • 1 Cup celery , thinly sliced
  • 1 Cup green seedless grapes
  • 1/2 Cup scallions , thinly sliced
  • 1 Cup water chestnuts , drained, sliced
  • 1 Golden Delicious large apples , cored and chopped
  • 1 Cup light Italian dressing
  • 2 Tbsp dry white wine
  • 2 Tbsp Dijon mustard
  • 3 Tbsp brown sugar
  • 2 Tbsp sesame seeds , toasted
Spray a nonstick skillet with vegetable cooking spray. Stir-fry pork strips about 4 minutes, or until cooked through. Set aside and keep warm. Combine next 7 ingredients in a serving bowl. Toss to mix. Combine next 4 ingredients in a saucepan over medium heat. Stir constantly until brown sugar is dissolved. Stir cooked pork into hot dressing to coat well. Remove pork. Pour half the dressing over greens mixture in bowl. Toss well. Place pork strips on top of salad. Sprinkle with sesame seeds. Serve with remaining dressing.
