Pepperoni & Broccoli Pasta Salad

  • 1 Lb rigatoni pasta , or other shaped pasta
  • 3 Cup broccoli florets
  • 3/4 Lb pepperoni , cut into .25 in. pieces
  • 1/2 Lb mozzarella cheese , cut into .25 in. pieces
  • 1 green bell peppers , seeded and cut into .25 in. pieces
  • 1/2 Cup red onions, chopped
  • 1/2 Cup carrots, grated
  • 1/4 Cup black olives , sliced
  • 1 Cup creamy parmesan dressing
Cook pasta in a large pan of boiling water 8-10 minutes until al dente. Drain. Rinse in cool water and set aside. Place broccoli in a steamer basket over boiling water. Cover pan and steam 3 minutes. Combine remaining ingredients, pasta and broccoli in a bowl. Toss to blend. Serve chilled or at room temperature.
