Buttermilk Pancakes

  • 1 Cup all purpose flour , sifted
  • 2 Tbsp sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 Cup buttermilk
  • 1/4 Cup unsalted butter , more for cooking, 2 Tbsp melted
  • 1 eggs
  • 1 1/2 Cup maple syrup
Sift together flour, sugar, baking soda and salt in a bowl. Combine buttermilk, 2 whole Tbsp unsalted butter melted butter and egg in another bowl. Whisk well. Fold dry ingredients into buttermilk mixture. Do not overwork, batter should be lumpy. Heat a heavy griddle. Brush lightly with butter. Using a 1/4 cup measure, pour batter onto hot griddle. Cook until holes begin to appear on top and pancakes are golden brown. Turn and cook 2 minutes or until pancakes are done. Serve with butter and syrup.
