Canadian Baked Eggs

  • 4 Canadian bacon slice
  • 8 eggs
  • 1 1/2 Cup fat-free cheddar cheese , shredded
  • 2 tsp parsley , finely chopped
Preheat oven to 325 ℉. Line bottom of 4 normal lightly buttered shallow ramekins or individual gratin dishes with bacon, cutting to fit, if necessary. Carefully break 2 normal eggs into each dish. Sprinkle cheese over top and bake 12-15 minutes, until whites are just set and cheese is melted. Sprinkle with parsley and pepper to taste before serving.
