Thai Cucumber Salad

  • 4 Fl Oz rice vinegar , or white wine vinegar
  • 2 Tbsp brown sugar, packed firmly
  • 1/2 Lb seedless cucumbers , cut into .25 in. slices
  • 4 shallots , peeled and thinly sliced
  • 1/4 tsp chili pepper flakes
  • 3 tsp cilantro , or parsley, chopped
Combine vinegar, sugar and salt and pepper to taste in a jar with a tight-fitting lid. Shake vigorously until sugar is dissolved. Combine with remaining ingredients in a bowl. Toss and marinate at least 30 minutes before serving.
