Tomato and Spinach Salad

  • 2 tomatoes , cut into thin wedges
  • 1 1/2 Lb spinach leaves , washed and torn into pieces, tough stems discarded
  • 2 Tbsp lemon juice
  • 1/2 tsp Dijon mustard
  • 2 1/2 Tbsp olive oil
  • 2 Tbsp water
  • 1/4 tsp salt to taste (optional)
Combine tomatoes and spinach in a salad bowl. Combine remaining ingredients and pepper to taste in a jar with a tight-fitting lid. Shake vigorously until emulsified. Pour dressing over salad and toss to coat well.
